There are many routes to the North Cape, but one country is excluded beforehand. Finland is ruled out, not only because it results in extra kilometers to cover, but also because it incorporates a ferry crossing, which goes against the Sub-Zero Race rules. That leaves only Sweden and Norway for the Scandinavian strech.
Various EV route planners can assist you in putting together the ideal route, ultimately resulting in a total distance between 3250 and 3400 kilometers. This is a great starting point, but in your attempt to become record holder in one of the categories, it needs more to it and will come down to the skill and persistance of you and your teammate(s).
Are there better and faster charging stations suitable for your EV which open up interesting shortcuts, which driving style for which strech to pick and how to extend your range, your pre-heating battery strategy, highways versus national roads, how fit is your team and are your power naps while charging enough, avoiding ascending roads, when to swap the heating for some extra layers. And finally and above all, how fast can your team change plans for the best; in case a charging station is out of order at point of arrival, sudden head winds, flunking charging sessions, steep dropping sub-zero temperature pockets or blocked roads and tunnels due to heavy snowfall or wind. Always have a plan B at hand, as giving up is no option!
